Morning Scribe specialty coffee with Chemex and flash-brewed iced coffee for House Ritual 003

BREW HOT. DRINK COLD.

HOUSE RITUAL // 003

Flash-brewed iced coffee with measured dilution.

Homemade iced coffee can taste weaker than expected when hot coffee is brewed at its normal strength and then poured over melting ice.

Flash brewing solves that by making the ice part of the recipe from the beginning.

Instead of using all of the brewing water hot, we reserve a measured portion as ice. The coffee extracts with hot water, lands directly onto that ice, and chills rapidly as the ice supplies the remaining water in the recipe.

THE HOUSE RATIO

30 g coffee
300 g hot water
200 g ice

That gives us 500 g of total water for 30 g of coffee, or approximately a 1:16.7 coffee-to-water ratio.

Only 300 g begins as hot brewing water. The remaining 200 g begins as ice and melts into the finished coffee.

THE RITUAL

You’ll need:

  • 30 g freshly ground coffee
  • 300 g hot water
  • 200 g measured ice
  • Fresh ice for serving
  • Chemex or pour-over brewer
  • Scale recommended

An automatic drip brewer can also work with the guidance below.

1. MEASURE THE ICE

Place 200 g of ice into the vessel that will receive the brewed coffee.

With a Chemex or suitable pour-over setup, the ice can sit directly beneath the brewer.

2. PREPARE THE COFFEE

Measure 30 g of coffee.

For Chemex, a medium-coarse grind is a useful starting point. For an automatic drip brewer, begin around medium and adjust according to your equipment and taste.

3. BREW WITH 300 G OF HOT WATER

Brew the coffee directly over the measured ice.

Because only 300 g of the recipe begins as hot water, the coffee reaching the ice is more concentrated than it would be in a conventional 500 g hot brew.

4. LET THE ICE CHILL THE BREW

As the coffee reaches the ice, the ice absorbs heat and melts.

That rapid cooling is one of the defining parts of flash brewing. The melted ice also supplies the 200 g of water deliberately withheld from the hot side of the recipe.

5. SERVE OVER FRESH ICE

Once the coffee has chilled and the measured brewing ice has mostly melted, pour it into a glass with fresh ice.

The first ice is part of the recipe. The fresh ice keeps the finished drink cold.

USING AN AUTOMATIC DRIP BREWER

Automatic brewers vary, especially in how their carafes are heated.

If your machine uses a warming plate, do not place ice into the carafe unless the manufacturer specifically says the brewer is designed for it.

A simple alternative is to brew the concentrated coffee normally and transfer it immediately into a separate heat-safe vessel containing your 200 g of measured ice.

If your brewer has a dedicated over-ice function or uses a suitable thermal carafe, follow the manufacturer’s instructions.

The same basic ratio remains:

300 g hot brewing water + 200 g measured ice

WHY MEASURE THE ICE?

You can brew ordinary hot coffee and pour it over ice, but melting ice adds additional water to an already completed recipe.

If that dilution was not accounted for, the coffee can become thinner than intended.

Flash brewing simply plans for that water in advance. The ice is part of the total brew ratio rather than an unknown amount of dilution added afterward.

WHY MORNING SCRIBE?

For the House version, we use Morning Scribe, our medium-light House Breakfast Blend.

Its smooth, bright profile and rounded body work particularly well here. Rapid chilling keeps the finished cup lively, while the coffee retains enough body to remain satisfying over ice.

Other coffees can be used as well, and changing the roast or profile is an easy way to explore how flash brewing changes the cup.

ADJUST TO YOUR CUP

The 30 / 300 / 200 recipe is a starting point.

Coffee, grind size, equipment, ice, and personal preference can all affect the result. Keep the basic recipe consistent at first and change one variable at a time.

If the cup tastes too weak, too strong, too bright, or too muted, adjust from there.

A repeatable starting recipe makes those changes easier to understand.

BREW HOT. DRINK COLD.

Flash brewing gives you iced coffee without treating melting ice as an afterthought.

Brew with hot water, account for the ice from the beginning, and serve the finished coffee cold.
