House Ritual 005 Blonde Shaken Espresso featuring Illumination Blonde Espresso

BLONDE SHAKEN ESPRESSO

HOUSE RITUAL // 005

Blonde espresso, ice, and a vigorous shake.

A shaken espresso is exactly what it sounds like: freshly pulled espresso shaken hard with ice until chilled, lightly diluted, and topped with a thin layer of foam.

For the House version, we use Illumination, our high-altitude Blonde Espresso. Its lighter roast brings more brightness and clarity to the drink, especially once it is served cold.

WHAT YOU’LL NEED

  • 2 fresh shots of Illumination espresso
  • Ice for shaking
  • Fresh ice for serving
  • Optional syrup
  • Optional milk or non-dairy milk
  • Cocktail shaker or other suitable sealed shaker
  • Serving glass

1. PULL THE ESPRESSO

Pull 2 fresh shots of Illumination.

Have your shaker and ice ready before you begin so the espresso can move directly from extraction into the shake.

2. BUILD THE SHAKER

Fill the shaker generously with ice.

If you are adding syrup, add it now.

Pour the fresh espresso directly over the ice and seal the shaker.

3. SHAKE

Shake vigorously until the outside of the shaker feels very cold.

Shaking does more than chill the espresso. It introduces air while the coffee cools and dilutes against the ice, creating the light foam and softer texture that distinguish shaken espresso from espresso simply poured over ice.

4. POUR OVER FRESH ICE

Fill the serving glass with fresh ice and strain the shaken espresso over it.

Using new ice keeps the finished drink colder without carrying over all of the partially melted ice from the shaker.

You should see a light layer of foam settle over the coffee.

5. FINISH IT YOUR WAY

You can drink the shaken espresso as it is or finish it with a small splash of milk or non-dairy milk.

If you added syrup, taste the drink before adding anything else.

For a stronger coffee-forward version, leave it black. For a softer finish, add a little milk and stir gently.

WHY ILLUMINATION?

Illumination is a light-roasted Blonde Espresso with crisp citrus, stone fruit, golden honey sweetness, and a silky body.

Those brighter characteristics work especially well in a cold preparation, where the espresso can remain lively rather than leaning heavily into darker roast flavors.

As we explore in House Ledger // 006 — Espresso Isn’t a Roast Level, espresso describes the brewing method rather than a specific roast level.

Illumination is one example of what happens when that method is paired with a lighter roast.

WHAT TO EXPECT

The finished drink should be cold, lively, and lightly textured.

The shake softens the espresso slightly through dilution and aeration while preserving enough concentration for the coffee to remain clearly present over ice.

Drink it black, lightly sweetened, or finished with a splash of milk.
